As a household, the Mansaray family love hot food. We would regularly eat spicy foods utilising various chilli sauces but we found a problem, either the sauces were not hot but had decent flavour or they were ‘blow your head off hot with no flavour’. So we decided to fix the problem for ourselves. We went and purchased a £500 blender (Vitamix, of course) and got to work. Utilising the power and flavour of the Humble Scotch bonnet chilli, we tested various combinations of ingredients until we developed what our friends and family call the most flavoursome explosion of spices and chilli they have ever tasted. Our kids even got involved with naming our sauce. They noticed papa was busy making the chilli and said 'Papa’s making chilli its Papa’s Pepe’. As a family, we then thought hmm that’s a catchy name Papa’s Pepe’. Papa made it, and Pepe’ is a word many Africans are familiar with to describe a hot sauce or spicy food so it stuck. So there you have it, a truly family made hot African pepper sauce made with flavour, love and care.
